O'Henry Cookies
This recipe was given to be by a girlfriend I miss very much. She lived in warren right behind me. Teresa was new to the area so she didn't know anyone. Having two young girls like myself I think it was just natural we become friends. The first thing that made me really like teresa was her laugh. Like me, Teresa's laugh came easy and often. I found it really easy to talk to her and being a bit older then her I think she valued my experiences of being a stay at home mom. I will always remember her girls were like night and day when you compared them on the outside. Kelly had a very fair complexion with fine white blonde hair....Then the younger daughter Katie was dark complexion and dark hair like her mom. Seeing these two girls you would have never guessed they were sisters. Life changed both our lives and I no longer even know where Teresa lives but I still think of her fondly and miss her friendship. Looking through my recipes I found this one and in my scribbled handwritting I will try to copy it here.
1 Cup Butter
1 Cup Brown Sugar
4 Cups Long Cook Oatmeal

1 Cup Chocolate Chips
1/2Cup Peanut Butter

Melt butter and pour over the brown sugar and oats. Mix well and press into a 9X13 inch cake pan. Bake for 10 minutes at 400 degrees.


Cool completely. Melt the chocolate chips with the peanut butter. Spread over the cooled cookies. Slice and enjoy. O'Henry....O'Teresa!
