Curried Chicken
This recipe is one I just tried out of my Mom's recipe box.  The first time I tried it I was not wild about the looks of it.  Since the card didn't have any cooking directions on it, I decided to try just putting the chicken on a 13 X 9 inch pan and baking it.  When it came out of the oven it was sort of pale looking and not very appetizing.  So after talking to my sister Laurel she informed me that I did cook it according to how she has always made the recipe.  She informed me that this is one of my Dad's favorites.  Now don't get me wrong the flavor of the dish is wonderful I just didn't like the appearence.  I decided to try it a different way and let the chicken marinate in the ingredients over-night.  Truthfully I just didn't feel like cooking dinner that night after a hard day.  I grilled the chicken breasts on my George Foreman basting it with the sauce as it cooked.  The look of the dish improved greatly so I think I will cook it this way from now on.
8 Chicken Breasts
1/4 cup butter (melted)
1/3 cup Honey
1/4 cup Dijon Mustard
1 small clove Garlic (crushed)
2 teaspoons Lemon Juice
2 teaspoons Curry Powder
1 teaspoon salt

Place the chicken breasts in a 9 X 13 inch pan.  Pour the above mixture over the chicken breasts and bake at 350 degrees until done.

*OR....place the chicken breasts in a Zip Lock storage bag and pour the mixture over the chicken and marinate over night.  Grill until done basting every 5 mintues.
