Chile Sausage Squares
This recipe comes from one of my Mom's sources, maybe from the bisquick box or another brand of biscuit mix. It is hand written on and 3 X 5 card. In the recipe it calls for 1/4 cup mayonaise divided but the recipe never got to what you are suppose to do with the second half of the mayonaise, so I added it to the egg mixture.
I served this as a dinner with a salad and vegtable but it also could be used as and appetizer or better known on my web page a little nibble. Also since I am not that fond of hot peppery things I cut it down to one can of chili's but use what ever your family wants.
1 Cup Biscuit Mix
1/3 cup milk
1/4 cup mayonaise (divided)
1 lb Bulk pork sausage
1/2 cup chopped onion
1 Egg (beaten)
2 Cups shredded sharp cheddar cheese
2-4oz cans chopped green chiles,drained
Combine biscuit mix, milk and 2 tablespoons mayonaise, Mix well and spread into a greased 13 X 9 inch pan and set aside.
Cook the sausage and onion until the meat is browned, stirring to crumble . Drain very well.
Layer the sausge mixture over the biscuit mix.
Combine the egg, cheese, chilies and mayonaise then spread over the sausage mixture.
Bake at 350 degrees for 30 minutes. Cool 5 minutes before cutting.
Makes 8 breakfast squares or 40 appetizers
